Okay, this is something that has been floating around in my head since school early this morning.

Sweet and Surprising (as their inspiration) Strawberry Muffins

Great for Valentines Day!


1/2 cup melted butter
8 oz strawberry yogurt
small jar strawberry jam
3/4 cup sugar
1 egg beaten
2 cups all purpose flour
1/2 tsp baking soda
red food coloring (optional)
(makes one dozen)

Combine dry ingredients in bowl, add yogurt, egg and melted butter, mix together. If desired, add food color to make a nice pink color.
The dough will have a thick consistency like cookie dough. Fill muffin tins half-full. Make small divots in center of each, fill with 1/2 tablespoon strawberry preserves. Cover each muffin with remaining dough.
Bake at 375 degrees for 15 minutes until golden.

*you may change this recipe by changing the flavor of the yogurt, and jam is also optional.
